Fruit and Nut Oatmeal Cookies

These cakey cookies make a nice after-school treat or afternoon goody.

Ingredients

  • 2/3 cup unsalted butter, softened (can substitute 1/3 cup applesauce and 1/3 cup butter)
  • ¾ cup honey
  • 1/3 cup dark brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup unbleached flour
  • 1 ½ cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups chopped dried fruit
  • 1 cup oatmeal
  • 1 cup chopped nuts

Instructions

Preheat oven to 350 degrees. Cream butter and, brown sugar and honey in a stand mixer with the paddle.  Add eggs and vanilla and mix well.  Stir together the dry ingredients and add to the mixer on low speed until combined.  Add remaining ingredients and mix thoroughly.  Drop by teaspoonfuls onto parchment lined baking sheets.  Bake 8-10 minutes.
